Honestly depends on what you want. Both are great. Sellsword with sharp gem is really good. Gotthard twin blade is very good too especially with chaos or dark gem. The Sellsword Twinblades is in my opinion the best PVE weapon in DS3 period. So y'know, that one. Oh yeah, I often use something else for the sake of variety, but it's the best haha. Although it's best to keep something you can two hand to use against shields, like a scimitar.

Sellsword are best. Then it's probably gotthard, O&U, and carthus. Winged Knight Twinaxes when you want some variety from Sellswords, the axes have comparable if not better dps & damage. Ringed Knight Paired Greatswords if you want some dumb fun on mobs and human-sized bosses (e.g. Abyss Watchers, Friede, Gael, etc.)
